Although Julia Kaiwi won’t publish her recipe for banana bread, this one employs the same ingredients and produces nearly as beautiful results. Use ripe bananas for the best results.
- 2 cups of banana puree
- 3 eggs
- 1 cup corn oil
- a single vanilla bean
- -2-cups of flour
- One sugar cup
- one tablespoon of baking soda
- 1/4 teaspoon of salt
- Combine banana, eggs, oil, and vanilla
- mix well.
- Filter flour, sugar, baking soda, and salt, and add to the banana mixture.
- Pour batter into two foil-lined and greased 9-by-5-by-3-inch loaf pans.
- Bake it for 45 minutes or until done at 350 degrees.
The mixture for one of the loaves may alternatively be mixed with 1/3 cup of beaten walnuts.
Advice: For banana bread, ripe bananas can be mashed and frozen.
