Kamote or Kamote Cue is referred to skewered deep-fried sweet potatoes with a coating of caramelized brown sugar.

It is a common meryenda (mid-afternoon snack) in the Philippines and can often be seen peddled around the busy streets.

One could say that Kamote Cue is one of the top-selling quick meals due to its simple way of preparation and also providing the long-lasting sensation of being full

(it can last for a couple of hours)– it does not hurt to mention that it tastes fine, particularly along with a cold bottle of soda or water.

This can also refill your energy temporarily “carbs and sugar combination will make you lively.”

Kamote Cue Recipe

  •  Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Servings: 2
Ingredients
  • 1 lb sweet potato sliced crosswise about 1.5 cm thick (Asian sweet potato is preferred)
  • 1 cup brown sugar
  • 1 cup cooking oil

Instructions

  • Heat the pan and sip the cooking oil.
  • Leave the cooking oil warm-up, then toss in the brown sugar.
  • Once the brown sugar starts floating, insert in the sweet potato and stir for 7 to 12 minutes.
  •  Flip the potato now and then to allow the sugar to stick.
  • Move the potato from the pan one by the other. 
  • You may directly skew the fried potatoes once removed from the pan.
  • Please leave it to cool down for a couple of minutes, then serve.

Word of Advice: Do not drain on paper towels; hence the sugar will stick to them, and you’ll lose a nice coating.

Rather, let the oil drip as you scoop the sweet potatoes out and place on a plate that allows cooling until the caramel hardens about 2 minutes. Thread onto skewers and serve warm.
